Instructions

1. Preheat the Oven & Prepare the Pans

  • Preheat your oven to 180°C (350°F, Gas Mark 4).

  • Grease and line two 20cm (8-inch) round cake tins with parchment paper.

2. Make the Sponge Batter

  • In a large mixing bowl, cream together the butter and sugar until pale and fluffy (about 3-5 minutes).

  • Add the eggs one at a time, beating well after each addition. If the mixture curdles, add a spoonful of flour to stabilize it.

  • Fold in the sifted flour, baking powder, and vanilla extract gently until just combined. Avoid overmixing.

  • Spread the whipped cream over the jam layer.

  • Place the second sponge cake on top and press gently.

  • Dust the top with icing sugar before serving.
