Ingredients

  • 2 cups all-purpose flour (plus extra for dusting)

  • ¾ teaspoon baking powder

  • 3 tablespoons unsalted butter or lard (room temperature)

  • ¾ cup warm water (about 110°F / 45°C)


Instructions

1. Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, salt, and baking powder.

2. Add the Fat

  • Cut the butter or lard into small pieces and add it to the flour mixture.

  • Use your fingers or a pastry cutter to blend the fat into the flour until the mixture resembles coarse crumbs.

3. Incorporate the Water

  • Gradually add warm water while stirring with a wooden spoon or spatula.

  • Once the dough starts to come together, knead it with your hands for about 3-5 minutes until smooth and elastic.

  • If the dough is too sticky, add a little more flour (1 tablespoon at a time).

4. Rest the Dough

  • Shape the dough into a ball and cover it with a damp kitchen towel or plastic wrap.

  • Let it rest for 15 minutes at room temperature. This relaxes the gluten and makes rolling easier.

5. Divide and Shape

  • After resting, divide the dough into 8 equal pieces (about 2 oz each).

  • Roll each piece into a smooth ball and flatten slightly with your palm.

6. Roll Out the Tortillas

  • On a lightly floured surface, roll each dough ball into a thin, round tortilla (about 6-8 inches in diameter).

  • If the dough springs back, let it rest for another minute before rolling again.

7. Cook the Tortillas

  • Heat a dry skillet or griddle over medium-high heat.

  • Place one tortilla in the pan and cook for 30-45 seconds until bubbles form and the bottom has light brown spots.

  • Flip and cook the other side for another 30 seconds.

  • Transfer to a plate and cover with a clean towel to keep warm.

  • Repeat with the remaining dough.

8. Serve and Store

  • Serve warm with your favorite fillings (tacos, burritos, quesadillas, etc.).

  • Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month.
