Ingredients

  • 1 tbsp fresh chives, chopped (optional)

For Fruit Scones:

  • ½ cup (75g) mixed dried fruit (raisins, currants, sultanas)

  • 1 tsp cinnamon (optional)

For Glazing:

  • 1 egg, beaten (for egg wash)

  • 1 tbsp milk (for brushing)

  • Extra sugar (for sprinkling on fruit scones)


Instructions

Step 1: Preheat Oven & Prepare Baking Sheet

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

Step 2: Make the Basic Dough

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar (if making sweet scones).

  2. Add cold butter and rub it into the flour with your fingertips until the mixture resembles breadcrumbs.

    • Take the other half and fold in dried fruit and cinnamon.

Step 4: Shape & Cut the Scones

  1. Lightly flour a surface and pat each dough portion into a 1-inch (2.5cm) thick round.

  2. Use a 2.5-inch (6cm) round cutter to cut out scones.

  3. Re-roll scraps and cut more scones.

Step 5: Glaze & Bake

  1. Place scones on the baking sheet.

  2. For Cheese Scones: Brush with egg wash.

  3. For Fruit Scones: Brush with milk and sprinkle with sugar.

  4. Bake for 12-15 minutes until golden and risen.

Step 6: Cool & Serve

  • Let cool on a wire rack for 5 minutes.

  • Best served warm with butter, clotted cream, or jam.
